A Michelin-starred chef who worked alongside the legendary Albert and Michel Roux has been called in to revamp the menu at Cranstons’ Cafe Oswald’s.

Steven Doherty has been working as a consultant at the cafe, on the first floor of Cranstons’ foodhall in Ullswater Road, Penrith.

His remit was to devise a new menu to showcase local produce and expand the range of seasonal specials.

The dishes include a New York deli-style sandwich using local, thinly-sliced salt beef, pickled cucumbers and American-style mustard.

Joe Bowness, manager at Cafe Oswald’s, said: “Steven has been an absolute delight to work with. He has brought new ideas to the table as well as trading his vast wealth of knowledge with us.

“We have devised a new menu with speedy dishes to serve our lunchtime crowd. We are keen to become the lunchtime destination of choice in the area.”

The new menus were launched last week. Mr Doherty has also advised on a Christmas menu, which will be available from November 27.

He said: “I’m delighted to have been asked by Cranstons to work with them to develop Oswald’s menus. It has been a great experience and it is a privilege to be able to work with such a long-established, award-winning business.”

His career in the kitchen began at the Savoy in London, aged 18.

From there he went to Le Gavroche, where he cooked alongside the Roux brothers as Le Gavroche became the first restaurant in the UK to hold three Michelin stars.

He moved to Cumbria in 1993 and is now the chef/proprietor at the cafe at Lakeland’s flagship kitchenware store in Windermere, as well as running a consultancy.
